Oscar Chacon and Francisca Cubillo Salas are the third generation coffee farmers who own the award winning La Mirella Coffee farm and the Las Lajas micro mill. Francisca has an agronomy degree from the prestigious EARTH University and uses her exceptional knowledge to experiment and push the quality of the coffees grown at La Mirella and processed at Las Lajas. Historically, the family produced the washed, fermented coffee that is so common in Costa Rica. However, experimentation is de rigueur for Oscar and Francisca.
This year, for the first time, they fermented the coffee in its own juicy mucilage, rather than the traditional water or dry fermentation methods. After having removed mucilage from the “seed”, it was added back into the fermentation tank in an effort to save precious water resources and create a unique flavor experience. This is the first time we know of that this process has been done.
